We've been offered sweet corn from a road side stand that wasn't ready only once and that was from a couple neighborhood kids who got carried away with their picking. The dry matter of silage (corn and haycrop) fed on most dairy farms is usually in the range of 25 to 40%. You might need to harvest a few at different stages each day for a few days to learn exactly when the baby corn is at the perfect stage for you.
